Note: The amount of sauce and chicken can easily be adjusted up or down; you just want enough marinade to cover the chicken at least halfway. Use your best judgment adjusting the garlic, peppercorn, and bay leaves.


  1. Combine all ingredients in a covered nonreactive dish and marinate in the fridge overnight.
  2. Transfer all ingredients, including the marinade, to a large covered pan or pot. Cover and heat on the stove on medium low.
  3. Once the sauce begins to simmer, turn the meat over every 5 minutes or so until it’s fully cooked, about 35 minutes.
