Pickled Onions

Ingredients

• 1 large red onion, thinly sliced
• 1/2 cup vinegar (white, apple cider, red or white wine, rice, etc.)
• Spices and seasonings (bay leaf, oregano or thyme sprigs, orange zest, mustard seeds, etc.)
• 1 1/2 teaspoon kosher salt
• 1 tablespoon sugar
• 1 cup water

Directions

1. Combine all ingredients and let set for at least an hour.
